Once a month, guests gather together for a night filled with laughter, connection, and the smell of fresh waffles floating through the air. This special evening is hosted by on-site managers Mark and Evielynne, who pour their hearts into creating something memorable for every RV guest.
More Than Just a Meal
Waffle Night isn’t just about food—it’s about bringing people together. Travelers from all over pull up a chair, share stories from the road, and enjoy a moment of connection that makes life on the road feel a little more like home.
For many guests, it becomes the highlight of their stay. And for Mark and Evielynne, it’s their way of giving back to the amazing community that passes through the campground.
Made from Scratch (With a Whole Lot of Love)
Evielynne doesn’t cut corners—these waffles are made completely from scratch, and in big batches to make sure no one leaves hungry!
Here’s the recipe she uses (scaled up for a crowd!):
- 6.75 cups all-purpose flour
- 3 tablespoons baking powder
- 9 tablespoons sugar
- 1.5 teaspoons salt
- 3 teaspoons cinnamon
- 6 large eggs (separated)
- 1.5 cups vegetable oil
- 6 cups milk
- 3 teaspoons vanilla extract (and yes… she triples that for extra flavor and extra waffles!)
It’s the kind of recipe that fills not just plates—but hearts too.

To be honest, Evielynne is usually so busy cooking, serving, and making sure everyone is taken care of… that she doesn’t get many pictures. And that says everything about the kind of hosts they are—always putting their guests first.
Between flipping waffles and checking on campers, this duo somehow manages to keep the entire campground running smoothly while still creating these special moments.

One of the best parts? Waffle Night gives Mark and Evielynne a rare chance to sit down and enjoy a hot meal themselves—if only for a moment—before jumping right back into helping guests around the park.
